Can the on-off plates be removed?

Yes you can fit with or without the on / off plates.

what is the phisical size of this switch

The fourth photo shows the exact dimensions.

I'm looking to put one of these on my tracker on my motorbike, how are people holding it in position on motorbikes? Or is it hanging loose?

I have the black switches on my bike to activate a rear fog light. Just drilled a hole, placed the switch through from the back and held in place by locking screw washer that comes with kit. Found it to work well and up to now waterproof.
