What is the height of the bottom crossbar (from counter up to the bottom of the bar)? I need it to be at least 10 inches high.

It is a little less than 7 1/2 inches from the countertop to the bottom of the lowest crossbar.

Can you buy extra fruit baskets?

If you can buy an extra one then I think you could easily fit it on the rack.

Is it big enough to hold pots, pans & other dishes at the same time?

It can hold cups, plates, and bowls mainly. But just depends on the size of the pan and what else you have in it.
