Has anyone tried making meringue with this?

I have not tried meringue. I have used it for beating most everything else and it is excellent. It feels very sturdy in my hands and the beaters really swirll.

Will it fit into a coffee cup? If not, does anyone know of one that will & not made plastic gears?

This will NOT fit into a coffee cup. The diameter of the coffee cup would have to be more than 3.75 inches! This one is all metal though.

The metal beaters are hitting the stationary bar. Is there a way to loosen something?

I found this item to be very poorly made. I was way overpriced. I returned mine immediately. I'm not surprised you're having problems.

Anyone use this to mix butter/sugar for cookie dough?

No, as I usually use my electric beater for cookie dough. I use this beater for beating eggs, pancake mix, etc. Items that are not thick and take a more powerful beater.
