Mr Turkey nearly roasted himself!
I ordered this roaster to do my 24 pound Christmas turkey (yes, I was very slow in reviewing this item!) and it worked beautifully! It was so much easier than doing it in the oven as I have done for as long as I have been roasting turkeys, which is a very long time! I was a bit concerned when ordering this roaster that my huge turkey may not fit, but it fit great, with room to spare! Great Roaster
Bought this roaster for our Thanksgiving turkey to free up oven space for other dishes. It worked like a charm and everyone commented that it was the best turkey ever! The self-basting really helps seal in flavor. We've also used it for roasting a prime rib and making lamb osso bucco. To make clean-up easier, line the pan with heavy duty aluminum foil or use an oven bag (being careful not to let the plastic of the bag touch the side of the oven so it doesn't melt to the sides). Here is the turkey recipe we used: 1. After thawing the bird, remove neck and giblets (reserve for gravy), then rinse inside and out and pat dry the bird. 2. Brine, season and/or stuff the bird as desired. We skipped the brine and used a cajun herb butter mix to inject into the meat and season the bird (melted butter, salt and pepper, cajun seasoning, lemon zest and finely chopped thyme, rosemary and sage). We also stuffed the bird with a mix of apples, onions, celery, carrots, lemon wedges and garlic cloves. 3. Pre-heat the roaster to 450F degrees (highest setting). Place the bird breast side up in the rack inside the roaster pan and make sure the bird is not touching the sides of the roaster. Brush with olive oil and seasoning then roast at high heat for 30 minutes to sear and brown the outside. 4. Turn the heat down to 325F and roast for several hours (as specified by weight). The roaster will self-baste the bird and seal in flavor and moisture as long as you do not open it! Do not lift the lid except to check the temperature in the last hour or 30 minutes. 5. Carefully remove the bird from the roaster when fully cooked and let it rest for 30 minutes before carving. This roaster is a great value and will make delicious roasts!

Performed above and beyond expectations!
I purchased this on rush order because once I brought my chosen turkey home for Thanksgiving, I realized that 25 lb monstrosity wasn't going to fit into my old electric roaster--and it was a very large roaster (or so I thought.) This Oster 22-Quart Roaster far surpassed my expectations, and I cannot stop gushing about it. After washing the roaster, I did a dry-run a few days before Thanksgiving to burn off the manufacturing smell. It only lasted about 5 minutes and wasn't too bad, so I was happy about that. 3 days before t-day, I began brining the turkey in the roaster (without power), refilling the ice every 12 hours. It was able to keep the brine at or below 40 degrees, even sitting a mere 5 feet from my roaring wood stove; the insulation on this thing is quite impressive. On t-day, we washed the roaster, then put the turkey on the rack inside with a little water, onions, apples, and celery, and set it to 350. Standard turkey roasting is 20 minutes per pound of bird, which should have given us about 5 hours of cooking time. The roaster finished the job, including a CRISPY brown skin, in 3.5 hours. It heated the bird evenly, leaving all the skin just beautiful and delicious and the meat moist and tasty. No need for a foil cover to protect the breast from drying out, though I did wad up a couple foil balls to hold the wings away from the sides of the pan. After we ate, I left the carcass in the roaster, filled it with 15 quarts of water, and let it simmer for 24 hours. I then used that stock to make 20 quarts of incredible turkey soup... all of this IN the roaster. With such a long period of constant usage (almost 48 hours), I expected this thing to break down or struggle, but it absolutely has not. It's running smoothly, heating evenly, and keeping a constant temp (as checked with my food thermometer). I've not been a huge fan of Oster products, due to their low-quality and tendency to break under pressure, but I couldn't be happier with this product. This was a heck of a maiden voyage for my new roaster, and it performed above and beyond what I was expecting.

I read many reviews, and would like to start by saying there certainly is a lot of confusion concerning these roasters. We bought this Oster 22 qt. because it cooks a larger quantity of food as compared to other 22 qt. roasters. I don't know if it's true, but that's what it says. We received it on time (2 days Prime shipping) and in excellent condition. I previously owned a roaster that burned two turkeys before I tossed it out, so I was reluctant to try again. My husband hunts, and kills a lot of wild pigs, so we have a ton of natural pork all the time. He wanted me to try to roast some of the pieces whole so he doesn't have to cut them down so much. He is meticulous about cleaning these animals, so the meat is always nice. We received the roaster yesterday, and roasted two large shoulders in it today. I washed and patted the meat dry, and then used a rub all over both pieces. I followed reviewers advice, and turned it down after the first hour. The recommendation was 350, which is where I started, and turned it down to about 280. It's a little hard to tell exactly on the dial, so I just guessed. The two shoulders were very large, and filled the pan, but not so high that it was touching the lid. I never peaked. The total cooking time was 4.5 hours, and the meat was falling off the bone. The pork is usually fairly moist, so I can only say that yes, it was moist, and very delicious. It was actually browned on top, so I think it might brown a turkey. I wanted to try it before Thanksgiving, so this was my trial run. So far, so good. I would like to give this product five stars, but I'm 61 and have sadly watched products get cheaper and cheaper, and their life spans are much shorter than in my early years in the kitchen. I expect, and want better quality, but I'm not going to get it. Sad but true. This unit is lightweight, and yes, the pan did discolor after the first use. I did not burn or overheat the unit. It is cheaply built. the lid is aluminum. Don't believe otherwise. The inner pan is not finished on the rims, except where you grab it to pick it up. Yes, it can cut you if you are not careful. Wash carefully. The whole pan did not fit into my sink to wash it, but I was able to rest the two handles on the front and back part of the sink so that the well was completely inside the sink. I filled it with hot soapy water and soaked it, and then gently cleaned it. It is discolored. I expected that from the reviews. I can live with it. I don't like it. One website said this unit is HEAVY. It is not. I wish it was. It is heavier than some, especially the Hamilton beach. The roaster did smell, for about 10 minutes. No big deal. One word of advice, wipe off any prints or other debris before you use it, or they might bake on the outer finish. Don't know, just guessing since it gets hot. And not that hot either. Just hot. Don't touch it while it doing it's thing. Common sense. I have a marble countertop, and there was NO heat under the unit. Here's what frustrates me. It is more expensive to build a quality machine, but it would last a long time and we would not be tossing them into the heap so soon. How much garbage can this world stand? So, that's my complaint, but it's a very general complaint with so many products these days. I do not expect this roaster to last through 10 years of moderate use, and I do plan to use it fairly often. If there is one out there that will, I would love to know about it. However, this roaster did a nice job for me.......today. Thanks Oster.

This has changed my life! Or at least how I cook turkey
I've used this just one time. I had a smallish turkey-- 13 1/5 pounds-- plus potatoes, carrots, and celery. I threw some chicken broth in as well as white wine, set it to 350 (according to the instruction booklet), and let it go. It took 2 1/2 hours but I opened the lid to flip the turkey breast side down. Once it was done, I set the temp to warm and just let it go until I was ready to pull it out and let it sit 15 minutes. This was the easiest turkey I've ever done. I've spatchcocked a turkey before and I like that method but it's work cutting the spine out of the turkey. The spatchcocked turkey takes a big oven which I know longer have. What I really like about this is my oven was FREE for whatever I needed. What isn't as good is the turkey doesn't brown the same way as it will in the oven. I considered putting it in a pan and popping it into the oven to brown but my husband said not to bother. I ended up slicing what we needed, and put the rest of the turkey in a very large (1 gallon) storage bag to pop into the refrigerator. It did have a funky smell the first time it heated up. I think a small piece of styrofoam was stuck between the pan and the heating element. The smell was short lived and had no impact on the turkey. This thing is HUGE. The wings touched the sides a little so they were browned some. I had a potato or two that also touched the side and was very well done. Very minor issues, but I would be concerned about an 18-20 pound turkey getting a little dark if they touched the sides.

Nice roaster oven
I just did our Thanksgiving turkey in the roaster yesterday and it turned out amazing. First and foremost you need a thermometer with a probe/wire attachment because you don't want to lift the lid during the cooking process. I bought a 15.5 lb turkey and it took two hours to cook (unstuffed). I started with a 450 degree setting added the turkey with stock in the bottom and cooked to 20 minutes. I then turned the oven down to 325 and finished roasting the bird. I turned off the roaster once the turkey was done, removed the lid until the roaster cooled, put the lid back on and let the bird rest inside roaster for a hour while I did the rest of my sides in the oven. The turkey was AMAZING it white meat was so moist and the dark was cooked to perfection. I have never had a turkey turn out this well and juicy in a conventional oven. The only thing is my bird did not brown like it does in the oven, but I will take a lighter colored bird any day that tasted that good and that moist. I have also made apple butter in my roaster. I wanted a big batch of butter to can and with all the methods out there the roaster over gave me the best volume. I got 21 half pint jars from about 20 lbs of apples and rave reviews on the apple butter. It didn't take as long as I thought it would, I think it was about 6 or 7 hours before it was done. I am pleased with my purchase

Roaster Oven and Crock Pot
I've been using this roaster oven since 2020 and it is solid. I use it for Thanksgiving turkey primarily and throughout the year, it doubles as a crock pot. I use it for soups and stews and anything else that requires a slow cooker. It's so massive it will hold way more than a traditional crock pot. It's amazing!

Took advantage of a good deal and bought in the summer
Took advantage of a good deal and bought in the summer. Just tried roasting a chicken with potatoes and (to get fancy) some scapes I hadnt figured out what to do with. Everything turned out really well - chicken moist and potatoes cooked perfectly. Good consistent heat and surprisingly good browning. the roasting pan insert and rack cleaned up easily and well. A good option on a hot day when you don't want to heat up the house by turning on the oven. Looking forward to using for my Thanksgiving turkey!
