Does the ink run when sealed?

No they do not run when used with most sealers.

How well do these perform on the "grid" texture of a canvas? I typically only paint canvas and then use fine liners for outlines and such

Not sure. I used the liners for outlining my rock painting. You can test it out on a scrap piece of canvas, or on the back if it is a framed canvas.

Does watercolor paint make them bleed at all? How do they compare to Uni Pin fineliners as far as black levels go?

No watercolor paint doesn't make them bleed at all. Compared to Uni Pin fineliners the black levels are a bit more noticeable in terms of size of pen ink and have a higher quality

Can they be used on wood?

Yes they can be used on wood but we recommend a lighter touch when doing so.
