Can you remove the back padding?

Yes you remove the back padding. The bar for the back padding just bolts on and could easily be removed.

Will this work for someone 6'5" without my knees hitting the ground?

Not the ground, but you will keep hitting your shins one the square back brace bar,

Any one tried this on carpet? Or would it slide around?

Mines on a painted floor so slippery but it goes nowhere very sturdy....it is heavy so would leave indents in the carpet but should be stable enough
