If the psi is the same between the gt20 & the gt30...how do you get greater water flow?

The impeller on the Goulds GT30 is larger than the impeller on the Goulds GT20. In the link below you can see the same discharge pressure with different flow rates. how many amps does this pump draw and what would the psi be at 70 gpm?

The 20/40 pressure switch I purchased to use with the GT irrigator pump says for use on a submersible & jet pumps. Can it be used on these pumps?

Yes as long as it is rated to handle the electrical connections for the 3HP motor.
