Is this large enough to hold a sheet pan?

Absolutely. It accordions out to hold my largest lasagna pan or baking sheet pans.

Is this rigid or does it flex easily?

It flex’s very easily. Just give it a pull in both directions to get the width you want, set it on the counter, and it’s ready for a hot dish/pan. My daughter has these too and we both love them.

Looks good. Where is it made?

I have no idea where it is made. I’ve had it for ten years or so. I have used it a lot because it holds a 9x13 casserole dish or covers a very large pan.

Is it thick enough to keep heat in open area from blistering finish on wood table if placing 500 degree pizza stone on top?

Sorry, I have never placed anything that hot on it. Most of the silicone items I have had have stated "for use up to about 400-450 degrees". I've never seen a silicone product that states use up to 500 degrees. Personally, I don't think that I would chance it. You could always call manufacturer directly. I often do that to make sure. It sure would be a shame to ruin the table.
