which color do I use for 14 gauge speaker wire?

Red is what is used, but I never use wire nuts on speaker wires. I use 2 piece butt connectors. It keeps the wires straight and I can take it apart when it's time to replace the speakers.

what color do I use for 12 gauge speaker wire?

For #12 cu wire the yellow is recommended, but that's for alternating current. I personally don't use wire nuts for speaker wire. I use inline splices. They're easier to hide, especially if the wires are gonna go to the back of the vehicle. An online splice is almost a must if the wires are gonna go under the carpet or door jams. Just my personal opinion.

Are these waterproof?

They do make waterproof connectors but the ones I bought are not.
