would this work to power a 6V sound machine/projector? My toddler ha a figured out how to unplug it no matter where we put it - needs to be on a shelf

It should have no issues with powering your projector. Make sure the cannon plug is the right size.

Would it power an Ammoon pedal looper?

Check the pedal to see what the power jack spec is...center positive or center negative. This battery adapter is center positive. The "Boss" power connectors are center negative, and most but not all guitar pedals use that configuration. So for most pedals, you would have to either cut the wires and swap the polarity, or you can physically tape the battery connector to the battery in reversed fasion (i.e. such that they would not snap together/pairing the like connectors instead the ones that mate.)
