How fine will it chop garlic and other?

I chop everything with this but do think the Norpro EZ-Grip is sharper. I used one for a couple of years and loved it. When it started getting dull from alot of use I ordered the OXO because of arthritis but still think the Norpro is a bit better at chopping things up as fine as you want.

Can anyone who has purchased this item very recently tell me if the current blade is sharp enough for cutting doughs well?

Yes it is sharp enough to cut doughs. I love it for cutting wonton wraps and my noodles. Makes a great counter scraper when you are done making noodles too.

Would this cut through soap?

Could this item scrap food off my stove griddle?

It should be able to do that pretty well. I have had success using it to scrape food off of baking sheets when I roast veggies in the oven. It's very sturdy. Just use care to not scratch your griddle.
