Ich habe dieses Messer bestellt da ich für meine Arbeit ein scharfes Werkzeug für feine Arbeiten gesucht habe.Grundsätzlich bewerte ich dieses Messer als sehr gut Verarbeitet. Alle Kanten sind perfekt abgerundet, wirklich hochwertig.Der Griff ist angenehm und das Gewicht ist Ok.Die Klinge aus CMV60 (eine andere Bezeichnung für VG-10 Stahl) ist ab Werk sehr Scharf. Die Schnitthaltigkeit würde ich als mittelmäßig einstufen. Die Damastoptik des Messers ist allerdings wirklich nur eine Zierde und kein echter Damast (Was bei der Arbeit mit dem Messer aber keine Rolle Spielt). Ich denke es wäre ein schönes Messer für einen Hobbykoch. Für einen professionellen Gebrauch scheint es mir etwas zu filigran.

Super Qualität, sieht einfach Sehr edel aus. Kann ich wirklich nur empfehlen. Aber Vorsicht ist wirklich höllisch scharf. Ich schleife es mit einem Belgischen Brocken. Das geht einwandfrei! Vorsicht beim Reinigen nicht mit einem Scheuerschwamm das zerkratzt die Oberfläche. Nur mit einem Lappen und eventuell Spüli abwaschen!!!

Great sharp knife

Es ist eine Freude ,mit diesem Messer zu arbeiten !Bin Koch u.weiss es zu schätzen wenn Messer endlich u. ausdauernd schneiden . Jedenfalls sowas hatte ich noch nie in der Hand .

Very happy with the knife. At first, I was looking at the Wusthof Ikon Classic, but decided on this one in the end.Main reason is that this knife is made of VG10 steel, which is simply better (harder) steel than Wusthof and other Zwilling knives because it stays sharp longer.Still, it is not so hard steel that it rusts, nor that it chips easily - making it a perfect fit for not-so-careful kitchen use.Also, when comparing, you can feel that this knife cuts a lot smoother through food, because of the thin shape and the lower sharpening angle.This knife comes out of the box with a razor sharp edge (literally), highly polished. Drop a tomato on the edge, and it is cut in half.Interestingly, the edge is sharpened a little bit off-centre: not 50/50 but more 70/30. I don't think I can notice that while cutting, though.The damast (clad layers) are pretty, but not useful I think, I don't believe that food is less sticky than with other knives.The handle feels really great in your hand, just as good as a Wusthof Ikon. There is a pretty red lining in the middle of the handle, where the metal and handle come together.
