Can I use this in my power steering fluid to see if there is a leak in my power steering pump

Funny you should ask, that's exactly what I used it for and it worked very well.

Will this dye change the color of the brake fluid? Or keep the same color and only show in a black light?

It is just my opinion that even though this product states total dye on the label it is best used in petroleum and mineral applications. I use coolant dye in brake and clutch fluids as they are all glycol based fluids.

Will the color be visible in water without a black light? Want to use for Science Fair dye project.
