Q: What is the maximum capacity?

I use mine in a large stock pot and it works fine. It might take it a little longer to heat a large volume of water but as long as you are not heating a bathtub with it, it should do well. It is very handy for pasteurizing a dozen eggs at a time, which is what I use it for.

Q: Other than the Anova, what container are you all using?

I've just been using a large stock pot. I've been very happy with my GG sous vide--but I will get a dedicated container with a lid in the near future.
