Q: what are the measurements without the towel rack or spice holder?

Counter is 35 1/2 inch's long by 15 1/2 in wide without spice rack or towel holder. I left off spice rack and attached a paper towel holder.

Q: Can the spice rack & towel bar be removed?

You do not have to add them when assembling it.

Q: How do you clean the kitchen island surfaces (countertop as well as cabinet doors, drawer, etc)??

Yes I love this thing it is perfect in my kitchen. Hugh drawer and very large cabinet for storing what ever you need.
