Can I use this without the spice rack? Is the side ok without it?

Yes- I took off the towel rack, and you would never know it was supposed to be there- both sides are finished- though there may be small holes where the screw would be inserted, they are not very noticeable.

Can this be assembled without the spice rack? (I think the rack would make it too long for my space but i dont want unfininished strips or holes)

Yes- I took the towel bar off of one side, without any signs of it having been there- the spice rack could also be left off, but I love having that extra space, so I am keeping it, even though it does make my kitchen smaller-
