how many of these does it take to catch the roadrunner?

One, the one the roadrunner takes from the cat. Then the cat will catch him!!!

Can anyone tell me the size of these catnip roll toys? Concerned that the cat could ingest this... Thanks, in advance, for responding.

We cut the tails off because my cats have tried eating through the tails and then it's just like gobbling a string. They've never tried to just eat the whole toy though and it's a bit too big to do that anyway.

are these soft enough for 6-12 week old kittens?

Kittens shouldn't be exposed to catnip until 6 months old - I can't remember why, but it's a rule that was drummed into me...
