How do these cages handle a back mount for triathlon? Do they launch bottles?

These are designed for frame mount to either the down tube or the seat tube. If you are asking can these be mounted behind the seat like many triathlon-type bottle holders, then I don't think these will work. You could try using zip ties to attach, but I'm afraid that would look cobbled together.

One person mentions issue with camelbak bottles staying in during rough patches. will camelbak podium chill insulated water bottle hold tight?

I haven't had any issues with the bottles coming out. I have also used specialized cages and aluminum and these hold the insulated podium bottles much better.

No, your bike should have the screws where the holder is mounted

How much does it weigh?

Something about 1.5oz or less. I highly recommend these. Have a total of 6 of them across 4 bikes and have never lost a bottle with this Cage. I use Camelback Podium Chill and Specialized Purist Bottles.
