Does this pad have adhesive on the back?

No - they are tear off sheets with no sticky backing.

Does this come with a pack?

It is just the notepad. No pack, no case, no folio, nor any other type of holder or protector. Just the pad. Very nice paper to write on.

Can I use a white gel pen? Or will it be hard to read?

A white gel pen would certainly be hard to read on cream colored paper.
