I've heard Brasso can make brass brittle or eat at metals over time. Is this true?

I really doubt this. I've lived in India where every piece of brass in the house (ornaments, metal corners on furniture, etc.) was polished every day, and we never had a problem. What will happen is that the pits inherent in the original castings will be eliminated as the surface is smoothed by persistent rubbing (which is why a lot of time during boot camp in the army used to be taken up by incessant polishing of brass buckles on uniform webbing), and frequent over-enthusiastic polishing may result in loss of detail (e.g., inscriptions) on some pieces. But eating away at the metal? No.

Would this work on an exterior front door handle?

If your door handle is brass or copper or even a stainless steel, the answer is YES! Rub on a soft cloth a few drops... let soak a minute, rub off. Brasso is the best but very gritty to work with. For myself I like patina on old door handles.

would this be good to clean a galvanized trailer?

This is a brass polish/ does fantastic job on any and all pieces of brass

would this help with a dull spot on a stainless sink ?

I just got done using Brasso on my stainless sink and with a little elbow grease it works wonderful!!
