My chain is caked on with grease and other stuff (shameful, I know) what is this kit like for getting the chain and gears clean???

You need a chain cleaner/degreaser which this kit does not have. I use a citrus based cleaner which I dilute down and spray on then agitate with a small stuff brush. Just remember to dry and re lube immediately.

What happens if the cleaning fluid gets onto the brake discs etc?

The pink cleaning fluid is fine on the brakes. They even state that on thier FAQ. On the other hand the protector in the spray can is the one that will cause the brake problems. With the spray it's best to spray onto a cloth and the apply from the cloth. I also use a little cover that I've made to make sure the brakes don't get contaminated with the protector.
