A Small but Mighty Workhorse: How Mandolin Slicer Simplified My Home Cooking for Years
As someone who loves to cook and experiment with new recipes at home, this Japanese Mandolin has quickly become one of my favourite kitchen tools. I particularly enjoy using it to slice cabbage for coleslaw, as it produces consistently thin slices that make for a an amazing texture. The compact size of the slicer also makes it easy to store in my already-crowded kitchen drawers. What really stands out to me about the Benriner BN-1 is how sharp and precise the blades are. Even after many years of use, the slicer still slices through vegetables with ease, making food prep a breeze. And when it comes to cleaning, it's as simple as running it under water and wiping it down. Aside from vegetable prep, I've also used this slicer to make thinly sliced potatoes for homemade chips, which turned out perfectly every time. Overall, the this Mandolin Slicer is a versatile and reliable tool that has made my time in the kitchen more efficient and enjoyable. I would definitely recommend it to anyone looking for a high-quality mandolin slicer that is easy to use and clean. Oh, and I almost forgot to mention about fermenting cabbage! As someone who enjoys making my own sauerkraut at home, this slicer has been a game-changer. The even and consistent slices that it can produces make it much easier to pack the cabbage tightly into a jar, which is essential for creating the right conditions for fermentation. And because the blades are so sharp, it takes far less effort to slice through the cabbage than it would with a knife, which is a real time-saver. Must-have tool for anyone looking to make their own sauerkraut, kimchi, or other fermented vegetables at home. Overall, I can't recommend this Mandolin Slicer enough. It's a compact, versatile, and high-quality tool that has made my time in the kitchen more enjoyable and efficient. From coleslaw to fermenting cabbage, this slicer does it all, and it's held up remarkably well over the years.

Fine Japanese engineering
It is exceedingly well designed: the curved grip works well, the bowl catch works well, the finger guard effortlessly slots itself into position such that the final strokes run on the base as a track, and then there's the completely understated but excellent decision to bevel the edges at the bottom, so the guard pulls away easily there, after the blade. It is very easy to slice very quickly very soon after first use. I'm reviewing for a home cook perspective, and I think it's a long overdue purchase - on it's maiden voyage I sliced about 1.5kg potatoes for boulangeres, and had finished in a couple of minutes at most. By hand I'd have still been going ten minutes later, and probably cut myself from not having bothered to sharpen the knife for too long. On the point of sharpening, I like that Benriner sell the julienne blade attachments separately as replacements, and the main slicing blade can be removed for sharpening. My only criticism would be that I think the level adjustment could be clearer: if lowering the table (thicker slice) you have to push down slightly as you go, or else back-off the adjustment a lot, push it down, then tighten to creep back up (gradually thinner) to the desired level. With some spring pre-load above the table, that issue would be eliminated. It would also be helpful if there were some indication of thickness other than eyeballing it and running test slices - a marked .5mm scale dial on the side say, transparent with the table as its own indicator. All in all though, very very good.

next level cutting
I was soldiering on for so long with a defective mandolin which eventually completely broke. This is a revelation. The blade is so sharp you don't even feel the cut being made. It has speeded the whole process up. I highly recommend this quality Japanese product.

If you are going to buy just one thing for your kitchen, buy this.
I bought this because I just wanted an easier way of slicing vegetables easily and evenly. Now I use it for everything - jobs that used to take ten-fifteen minutes are done, quite literally, in two. It is, in my opinion, probably THE most useful item that I've ever bought for the kitchen, after knives and pans. Take, for example, making a curry base with five finely chopped onions - that would take me fifteen minutes to peel the onions, chop lengthways, rotate and then chop sideways, and even then the results would not be even. It now takes me longer to peel an onion than it does to slice it into fine, even pieces with the mandolin. What I particularly like about the Benriner is that it is so easy to wash and keep in good condition. Sure, you can buy more complex and probably safer mandolins, but would you ever actually USE them knowing what a faff it is going to be to take it apart and clean it? Probably not.- the simplicity of the Benriner design means that there is very little that requires cleaning, and washing takes a minute at most. I have to admit, I was initially sceptical of the use of a polymer body compared to stainless steel, but it's an excellent quality and grade of polymer and perfect for the job - I wouldn't bother to pay extra for stainless now. In terms of safety, the safety 'handle' is probably too small for some people (my wife doesn't like it), so I don't tend to use it very much. I sliced my finger tip once as a result, but have now got the hang of it, and can gauge slicing things so that I now do it safely. If necessary, I still use the handle, but not that often. I've had this for a few months now, and the blade is as sharp as ever. I'm sure it will need sharpening or replacing at some point, but I can't see that being necessary for quite a while.

Might want the larger size as well
Lovely mandolin slicer. If I had any gripes it is my own fault for not considering the larger size (The Benriner BN-95W is around £70, which is just over twice the price of the BN64W) . A medium sized onion only just fits within the width of the blade. Some vegetables you can cut into smaller pieces to fit but that's obviously not an option if you want onion rings. The other gripe is that the maximum thickness appears to be less then the 8mm stated. It does in fact say adjustable from 0.5mm to 0.8mm but this must be centimetres, i.e 0.5cm to 0.8cm. A pound coin would just about slide under when set on maximum thickness. It would help if the cutting blade sat as high as it could inside the frame instead of being pushed down by a millimetre or two by the retaining screws. You can see the gap in the online photos as well as the one I've added. Moaning over. This made very short work of slicing the onion, courgette and softish aubergine shown partly cooked in the first image. I can't see myself using it for julienne but you never know. I should add that it took seconds to wipe clean and overall I very pleased with it.

UNFEASIBLY SHARP
Summary: This one works the way the others are supposed to. Buy cut resistant gloves rather than using the handpiece. Long version: When I was a kid, my mum bought a mandolin of the 'JML/as seen on TV' type, and it lay at the back of the cupboard unused. I spent £40 on a mid-top range one from my local kitchen store. It was better, but still didn't live up to expectations. This one is exactly what I'm after. Potatoes, onions, carrots... It treats them like air. The main blade is ridiculously sharp, as are the julienne blades. Hold veg, rub up and down over plate - sliced veg. It's THAT simple and quick. Seeing some comments about the fixings, the main body of the one I received was plastic, but all of the holding nuts were metal. Two very VERY minor anti points... a) The finger guard is strong, but you're still very close to the TEETH OF DEATH. If you're *not* looking to get long julienne strands (by slicing veg lengthways) then just use a pair of cut resistant gloves and leave the guard in the box. The gloves really do work, and you get a much better sense of what you're doing with the cutter by holding the veg directly in your hand. b) The julienne blades are quite short - the max depth you can use them at is about 3mm - don't go thinking you're going to use this for making chips. Looking at other reviews, the company has been around for a while and Grunwerg has a branch in Sheffield - I doubt I'll need to think about this for a while, but it looks like there wouldn't be a problem buying spare blades for this.

Professional equipment at bargain cost
If you've ever Googled mandolins in anticipation of buying one, the Berlinger will almost always be mentioned. What they don't mention is the cost differential related to other products reviewed. The Berlinger is Japanese made and has been around for quite a while. No fancy bits, just pure functionality. If you watch many cooking shows, you will notice that the professional chefs are using the Berlinger more than almost any other brand. The beauty is that it is pure simplicity and function. The most appealing design feature to me was the ability to resharpen the blade which is held in place by a couple of screws to the plastic platform. Adjustment is simple with a single thumb screw determining platform height and slice thickness. Granted there are no "scales" to measure thickness, but one slice and a slight adjustment is all that is necessary. Included are 3 supplemental blades for further subdividing food into sticks, julienne cuts, etc. They are easily positioned and held in place with thumb screws. After my first use of this product, my "V" slicer went immediately into the trash. The food holder is of marginal value, but a slice resistant glove or simply paying attention to detail makes it almost vestigial. Probably one of the best kitchen purchases I have made in several years.

A fantastic mandolin but beware of extra charges
I've used a number of different mandolins and this Benriner is simply the most efficient and best slicer. The beauty of this model is that you can adjust the thinness of the slices by turning the small button on the back of the mandolin to raise or lower the top part of the mandolin. It's therefore effortless to set your desired slice size and with no additional parts, so simple to clean. You receive three blades for juliennes. I inserted the medium blade to julienne a carrot and I was simply amazed that a) this mandolin could actually julienne it properly and without applying huge force and b) that the juliennes were perfect. Passing the "carrot test," which my other mandolins could not manage, indicated that I was working with a quality product. I've since used it for slicing shallots, tomatoes, lemons and cabbage, all of which it managed beautifully. Incidentally I set the blade to the thinnest slice size and sliced a lemon, the result was so thin, it was like a microscope specimen. Some other reviewers have cast doubt on the efficiency of the accompanying finger guard. It's not brilliant compared to those with a larger plunger style grip but it does work, better with some things than others. As a product the only negative thing I can say about it is that it's a little thin for larger items but so far, that's not been a problem for me. In regards to the shopping experience, buyers should be aware that if you purchase this from Amazon reseller EIKOKUJIN NI AKIHABARA [ Send Tokyo style ] who are based in Japan, there is a high probability that you will be charged VAT and a Post Office handling charge before your delivery is made. In my case this totalled £18.85! There was no mention of this anywhere on the Amazon order page. So while the product is excellent, I would strongly recommend purchasing from a UK based supplier. You will pay less in the end.

Small, slippery and impractical
1. The product is too narrow, which, makes its use limited. Apples can for example not be sliced, unless they are very small. 2. The text on the base makes the finger protection come to a stop during slicing. It could be solved with a sharp knife, but it shouldn't really be needed. A manufacturing fault. 3. The product lacks a base/stand. It need to be used with some kind of bowl, but the product is very slippery, and needs to be clamped down to the bowl unless you are born with an extra hand. In summery, a completely miss this is.

¡Definitivamente recomendable!
