will New Super Mario Brothers work on any version of the Wii or does it have to be a newer model?

Any Wii with a disc drive will play any Wii games. The Wii U is also backwards compatible, so that will play WiiU games AND Wii games.

What characters can you play as

If you play alone, it's best with Mario. If you have four controllers, you can play with four people, everyone has a different character. I highly recommend the game! Have fun!
