How bramble proof are these?

Pretty good, bit of care needed with really tough brambles, but then you would probably wear thick leather gloves with full wrist protection as well.

Warm, no. Waterproof, no. They are work/task gloves, also good driving gloves. Good dexterity. If you want warmth you could buy glove liners and wear them underneath these.

Two questions....1) how do we know these are original and not taiwanese/chinese fakes? 2) are they good for gym workouts?
