Would one hold a tablespoon equivalent?

One of the spoons holds less than one table spoon. So the answer is no.

Are these plastic or ceramic? I don't see it a description of the material anywhere.

They are solid plastic - melamine

How wide is the spoon?

Good morning! The spoon is 1” wide and 7.2” long . We hope this is helpful for you.
