Where are the baskets made?

These particular baskets are made by a small family business in Vietnam. I love mine!!!

When making a sourdough, do you suggest using liner in the basket for the overnight fridge rise or putting it straight into the basket itself? Thanks!

I have never used the basket (with or without the liner) for the overnight fridge rise. I have only used it for the final rise just before baking. I prefer to use only the basket, as it makes a more artesian looking loaf which I prefer.

Are there 16 inch or even larger bannetons available?

That's a pretty big banneton -- 40 cm diameter, and it's *a lot* of dough. (There are some 40 cm long oval ones around but since you ask on a page for a round one....) I don't think such large loaves are popular in the US, so you may need to source from Europe. Various European web sites list them for up to 2 Kg dough weight (which is 27 cm diameter). You can improvise with a round wicker basket lined with a well-floured tea towel, or even a towel-lined mixing bowl.
