If I'm using this cable for both the hot lead and ground connections, would i still ground the shielding or would that create a ground loop?

I do not think you need to ground the shield on the cable itself but I am guessing it would not hurt. I would ground all the pots, the bridge, the selector switch to the input jack negative with a continuous solid copper wire and solder.
