How long does it take to boil

How long is a piece of string!!!! It depends how full you have the container. If full it should take about 20mins, that is for the larger neostar.

Does the dispenser have a manual button to pump out the water or does it only have the electric switch?

Yes there is a manual pump located on the top of the unit. It is a large button approximately 3.5" or 9cm across, you can lock it by turning the button clockwise, unlock it by turning the button anticlockwise, it is a very efficient pump. Hope this helps.

What is the water tank made of? Is it made of stainless steel? Does it have any sort of non-stick coating?

It is steel but if you have hard water like I have it is a hard and awkward task to keep it clean, I have had to buy a water filter which has greatly improved the situation. Bristol water is and has been shocking. Often smells and very hard.
