why are these called soft grade?

Drawing pencils are graded according to hardness or softness of the graphite. Hard pencils will draw a thin hard line while soft pencils permit shading and softer lines. "Hard" pencils are graded from up from H so that H is hard, H-2 is harder, etc. Soft pencils are graded up from B so that B is soft, B-2 is softer, etc. An HB pencil is in the middle point, and your everyday yellow No. 2 pencil is usually HB, as is the "lead" in most mechanical pencils. This a Soft set ranging all the way out to B-9. I believe Prismacolor sells a hard set as well. I find B-6 to be my go-to soft pencil. These are lovely pencils, by the way.

Are these the pencils that the graphite doesn't rub off on your hands and clothes?

If you don't want the graphite on your finished work to smear, spray with a light coating of Workable Fixatif, which is designed for just this purpose.

Would you recommend using these for sketching on canvas before using acrylic paint? I realize regular graphite pencils are not the best

I would never put graphite on canvas before acrylic. I tried to draw graphite on canvas and I made a big mess. Graphite and acrylic muddy each other, graphite turns black and gray mixed with acrylic because acrylic is water based.
