Required to make cassoulet
If you ever want to make cassoulet (and why wouldn't you want to?) then confit duck leg quarters are absolutely required. These confit quarters are the same high quality you would expect from Gressingham. My only criticism is that they are fairly small, so much so that I'm taking off two stars that's how small they are. For the price I expected large, plump confit leg quarters but these did not meet ky expectation. Saying that, the flavour was good and they are well made. For me though, I'll give them a miss next time I am making cassoulet or have a hankering for confit duck and I will search out a different brand.
