One review said there aren't dual controls for the top and bottom. However a video on You Tube of a person using it mentioned it did.

There are only controls on the top, one is for the timer and the other for the temp. I have used it a few times, and I learned fast that the pizza will burn even with it rotating. I used a lower temp (1-5) 3 and still burn on top. My Daughter has another kind, and after seeing hers I bought this make, but hers NEVER burns. I would not rush out and buy this one, I would shop around first.

Will this cook from pizza made with fresh dough, rather than the precooked grocery crusts?

Probably will?,I've been buying uncooked pizzas at Papa Murphy's and their dough is fresh uncooked and it works great!

Will it work with a digiorno pizza. How about one of the stuff crust ones?

Trial and error is the best answer I can give. Maybe try a second lower heat for extra time after initial cooking cycle. Just would have to experiment. Currently for a thin crust 'jacks' pizza I do 25 minutes at #5 then I let it sit 20 minutes, this way I don't scald the roof of my mouth. Even though the oven has small vent holes the interior stays pretty warm. Hope that helps.

What type of non stick coating? ptfe or anodized?

Call the company at 1-800-851-8900. We cannot use sharp knives on it, but we love the pan! Nothing sticks.
