El mejor vinagre balsamico blanco.
En uno de mis viajes por Italia tuve la suerte de visitar, en Módena, la bodega Malpighi. De primeras compruebas que el aceite balsámico que se vende en España es basura. No es lo mismo IGP de DOP. Además del estándar de 5, 10 o más añosn hacen un excelente vinagre balsamico blanco. Durante estos años no pude comprar el de 8 años blanco, que es mi favorito, teniendo que conformarme con el de 5 años (muy bueno, pero no tan excelente como éste). Al fin he podido comprarlo :))))

Eine perfekte Zutat
Ich nutze diesen weißen Balsamico Essig von Prelibato schon recht lange in meiner Küche, weil er Salaten und Speisen das gewisse "Etwas" verleiht. Es handelt sich dabei nicht schlechthin um Essig im herkömmlichen Sinne, sondern um eine Zutat, die 8 Jahre gelagert wurde und vom Geschmack her leicht sirupartig und süßlich ist, so dass man nicht primär die Assoziation mit Essig verknüpft. Vielmehr ist es eine Möglichkeit, beim Zusammenspiel verschiedener Gewürze damit das Verhältnis von Süße und Säure perfekt auszugleichen. Das Produkt ist zwar alles Andere, als günstig im Preis, aber er ist es mir wert, und ich kann ihn jedem Hobbykoch empfehlen, der mit erlesenen Zutaten gern experimentiert.

Pair with a lovely dark green olive oil!
This vinegar (and its sisters) along with carefully curated dark green olive oil has changed my salad game. I am no gourmand, but I cannot imagine returning to lesser "balsamic vinegars." I've peeked behind the curtain of the truly elevated salad.❤️
