HOW TO MAKE BANANA BREAD?

I have a recipe that I use to make banana bread with a combination of Bob's gluten free flour, oat flour (grind up oats in a blender), and whey concentrate (available in bulk from natural food stores, or in tub form in the health section of many stores).This gives a good density to the loaf and good flavor. The oats are a humectant (they retain moisture) so the loaf will have the familiar texture that you'd expect from banana bread.Here's my recipe (doesn't use butter, sugar, or flour):222g bananas (about 2 medium bananas, can also substitute any or all for pure pumpkin purée)69g liquid egg whites61g applesauce1 tbsp sour milk (I mix some milk and lime juice and let it stand for a while before adding it)2 tsp vanilla extract1 tsp butter extract (a nice addition to just about any baking done without butter)1/2 c stevia or other sweetener1/2 tsp salt108g whey concentrate30g gluten free flour30g oat flour (can get certified gluten free oats for a fully gluten free loaf)1 1/2 tsp baking soda1 tsp xanthan gum (helps the loaf hold its shape when it rises, can try the recipe without it and see if you like it)Spray loaf pan with cooking spray, dust bottom with dry ingredients before adding them to the wet ingredients.Mix well, pour into pan and bake at 350º until internal temp is 185º (about 30-45 minutes).Sorry the measurements are in grams. If I get to converting them to cups and so on I'll update the recipe.
