Very good flour.
I was apprehensive about this flour while kneading the dough. It wasn’t coming together smoothly, smelled a tad different from other bread flour I’ve used. But after letting it rest and warm proof for about 4 hours, I was able to roll it out into a beautiful pizza base. It holds really well and bakes easy. Tastes lovely. I will definitely continue buying it.

Not an ideal beginner-friendly flour
I have been using this flour for about half a year for a whole bunch of sourdough experiments. It does well at around 65% hydration, but beyond that it just goes to pieces. I've had plain maida behave better in terms of gluten development than this one did, and made me question my own dough kneading abilities. I knead my bread dough's by hand, and this took over half an hour to knead into a decent windowpaning consistency and at higher hydrations. Only when I shifted to another bread flour (C-8714) did I realise how much this flour had sabotaged my doughs over the last half year. If you've been finding your bread heavy and dense, this flour is pretty surely the culprit. It'll probably work if you have a stand mixer that'll turn the dough for hours on end.I've used other Josef Marc products— their sourdough starter which I would swear by, which is why this felt like the natural flour to use, but is not a beginner-friendly variety. It sips water slower, and will turn into a soupy mess if hydrated all at once (for higher hydrations). So lots of resting, coil folds, more rests, and coil folds.
