An essential ingredient of lemon meringue pie.
I have tried making lemon meringue pies from scratch, but these pies had about a 50/50 chance of coming out well. With the addition of Jell-O, Cook & Serve lemon pudding mix however, they turn out perfectly. Whether it is pectin or thickener in the pudding mix that guarantees success, I don't know, but I never make a lemon meringue pie anymore without Jell-O, Cook & Serve lemon pudding mix.This recipe of mine, using Jell-O, Cook & Serve lemon pudding mix, is as follows:Beat:2 egg yokesgrated rind from 1-2 lemonsjuice from one lemon (between 1/4 and 1/2 cup)enough water to make 1 1/2 cups liquid total1/2 cup sugarONE 2.9 oz JELL-O COOK & SERVE LEMON PUDDING MIXBeat together and microwave, stirring every minute.Cool 5 minutes, stirring twice.Pour into a baked and cooled pie crust.Top with Meringue, sealing edge of crustBake pie at 350 for 10 to 15 minutes more until meringue is browned.Refrigerate.Meringue is: 4 egg whites and 1/3 cup of sugar (added slowly to beaten whites)This recipe is fool-proof and results in a delicious pie as shown in my photo, but it needs the essential ingredient, aka JELL-O COOK & SERVE LEMON PUDDING MIX!

Lemon cook-n-serve pudding
Hard to find cook-n-serve lemon pudding. This makes the best lemon meringue pie. Just giving a 4 star for the size. These boxes are small, only 2.9 ounces - not the larger 4 ounce box. You will need two boxes for a pie.
