Not sure about the technical answer, but I have all my cookware as Blue Diamond and love every piece of it.

Do you offer this griddle in stainless steel color?

I don’t think they come in other colors, but mine discolored after only a few uses. I think I made pancakes once and bacon once and the pan was ruined. My blue diamond saucepan has had no problems though.
