Youtube reviews say that the tiles are awfully small. What is the size of each tile? Is it hard to see a tile from across the table?

The room tiles are 1.75" x 1.75". The information on the tiles is pretty small but I haven't experienced any issues. The two castles that you are working on are usually close to where you are sitting so they are fairly easy to view. It will require some leaning in for a better view over the course of play.

Is there just one winner each game?

Yes. You work with the player to your left and the player to your right, and you score the lower of the two castles. Whomever has the highest of the lowest scores is the winner. It can be a little strange to try and wrap your head around, but after a game or two, it all makes sense.

Can this game be stretched to 8 players without compromising the game play?

You might be able to stretch it, but you would either need to create some new pieces for the game or buy a second copy and use some of those parts. The game as it stands will not easily work for eight people unless two of them act as partners.
