To be clear...this will fit a Canon 300 2.8, correct?

Yes it will fit the 300-600, i have it on my 400,2.8. It is great. There is an extension piece for the 600 you will not need.

Does this fit on a gimbal tripod head?

While I have not used a gimbal head with this I would think it would work ok - may not have the best rain protection. Getting the lens in place might be tricky. I would suggest contacting Think Tank directly and get their input before purchasing.
