The seemed to stay fresh for a really long time. We placed the leftovers from the open packet in a mason jar with a lid, and they were fine months later. Please note, we are in a dry climate, and your results might be different in an area with higher humidity.

What kind of starch is used? I have a family member who gets an itchy rash when she eats any corn. I need to know all of the ingredients, in detail.

The side of the package list the ingredients as "wheat flour, starch". So no way to know what type of starch that is. Forty years ago I would have said it would definitely be potato starch - corn isn't native to Europe of course - but in today's international world who knows. Sorry!

Not sure about Kosher, but ingredients and wheat flour and starch, and I'm assuming water. Hope this helps.
