Would  this be  safe to use with a 100V 50/60hz 900w rice cooker? I read that I may need double the recommended 900w on the rice cooker?

This converter allows maximum 1600W. I'm using this for a digital controlled toaster oven (100V, max 1350W) for a while and there has been no issue. Electrical devices such as motors require more power than steady-state power consumption because of the large current flow at startup. Rice cookers are heaters, so I don't think you need to worry about this issue.

Question 2

Do you make one with a higher wattage capacity? My Japanese rice cooker uses 1850W.

We have a plan to manufacture converters with higher wattage capacity that use Japan appliances in US or CA. But it need time. R&D and test and test and test... :)

Just to be 100% clear, umisound, the highest operating temperature is 105 celsius? or 105 fahrenheit?

105 celsius. Kindly be noted that keep away from it if you feel hot.  For continuous use over 2 hours, the max power 900W is recommended.

what are the safe operating temperatures for the 1800W model?

105 degree. Recommend using the 1800W step down voltage 120v to 100v converter with Japanese appliance which has rated power below 1500W. If you need to use the voltage converter continuously over 2 hours, the power consumption of appliance should be less than 900W. And do not touch the shell if you find it is hot.
